  • 3 tablespoons ghee or oil, for the pan

Instructions for Layered Paratha Recipe

Step 1: Mix the dough
In a large bowl, combine the whole-wheat flour, all-purpose flour, and salt. Add 1 tablespoon oil and gradually pour in the warm water, mixing until a soft dough forms. Add water a little at a time; the dough should feel supple and slightly soft without sticking heavily to your hands.

Step 2: Knead and rest
Transfer the dough to a clean work surface and knead for 8–10 minutes, until smooth and elastic. Lightly oil the surface, place the dough in a bowl, cover it, and let it rest for 30 minutes. This resting time relaxes the dough so it rolls and stretches more easily.

Step 3: Make the layering paste
Stir the melted ghee or oil with the 2 tablespoons of flour until smooth. Divide the dough into 8 equal balls and keep them covered while you work so they do not dry out.

Step 4: Roll the dough thinly
Lightly flour your work surface. Roll one dough ball into a thin circle or oval, about 9–10 inches wide. Brush a thin layer of the ghee-flour mixture over the entire surface. The coating helps separate the dough into crisp, flaky layers as the paratha cooks.

Step 5: Fold and coil
Starting at one edge, fold the dough back and forth into a long strip, like a paper fan. Keep the folds loose. Coil the strip into a spiral and tuck the loose end underneath. Place the coil on a tray and cover it. Repeat with the remaining dough balls.

Step 6: Rest the coils
Let the dough coils rest, covered, for 15 minutes. This brief rest makes them easier to roll without the dough springing back.

Step 7: Shape the parathas
Place one coil on a lightly floured surface. Gently roll it into a round paratha about 7–8 inches wide. Use light, even pressure so the layers remain distinct. If the dough resists, let it rest for a few minutes before rolling further.

Step 8: Heat the pan
Warm a heavy skillet or griddle over medium heat. Once hot, place one paratha in the dry pan. Cook for about 1–2 minutes, until small bubbles appear and the underside has a few golden spots.

Step 9: Fry until golden
Flip the paratha and spread a little ghee or oil over the cooked side. Flip again and grease the second side. Continue cooking and turning for 1–2 minutes, until both sides are golden with crisp patches and the center is fully cooked. Press the edges gently with a spatula to help them cook evenly.

Step 10: Serve warm
Transfer the cooked paratha to a plate and cover it loosely with a clean towel while you cook the remaining dough. For a looser, flakier texture, gently scrunch or clap each hot paratha between your hands once or twice, taking care not to tear it. Serve warm.

Tips for Layered Paratha Recipe

A soft, well-rested dough is the key to tender lachha paratha. If the dough feels stiff while kneading, add water a teaspoon at a time. If it becomes sticky, dust your hands and work surface lightly with flour.

Roll the first dough sheet thinly so the finished paratha has plenty of layers. Spread the ghee-flour mixture in a thin, even coating; too much can make the dough greasy and difficult to shape.

Fold the strip loosely and avoid pressing the coil flat before rolling. Gentle pressure helps keep the layers visible. If a coil shrinks while you roll it, cover it and let it rest for 5–10 minutes.

Keep the skillet at medium heat. A very hot pan can burn the surface before the inside cooks, while low heat can make the paratha dry and firm. Adjust the heat as needed and cook each side until golden spots appear.

For a richer taste, use ghee. Neutral oil also works well. You can use all whole-wheat flour for a more traditional, hearty texture, though the parathas may be a little less tender.

Storage FOR Layered Paratha Recipe

Cool leftover parathas completely, then place them in an airtight container and refrigerate for up to 3 days. To freeze, separate them with parchment paper and store in a freezer-safe bag for up to 2 months.

Reheat in a skillet over medium-low heat for about 1 minute per side. For frozen parathas, thaw first or warm them in a covered skillet over low heat, turning occasionally. A short covered reheat helps soften the layers while keeping the outside lightly crisp.
