Creamy Avocado Corn Salad

Ingredients 

  • 3 cups cooked corn kernels, cooled
  • 2 ripe avocados, cut into small cubes
  • 1 red bell pepper, diced
  • ½ small red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • ½ cup sour cream or plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Add the cooled corn, diced avocados, red bell pepper, red onion, and chopped cilantro to a large mixing bowl.
  2. In a separate bowl, combine the sour cream or Greek yogurt, mayonnaise, lime juice, honey, garlic powder, smoked paprika, salt, and black pepper. Whisk until creamy and completely smooth.
  3. Pour the prepared creamy dressing over the corn and avocado mixture.
  4. Using a large spoon or spatula, gently fold the ingredients together until everything is evenly coated with the dressing. Mix carefully so the avocado pieces remain mostly intact.
  5. Taste the salad and add a little more salt, black pepper, or fresh lime juice according to your preference.
  6. Cover the bowl and refrigerate for approximately 20 minutes. This gives the flavors time to blend while keeping the salad cool and refreshing.
  7. Before serving, gently toss the salad once more. Finish with additional chopped cilantro and a light sprinkle of freshly ground black pepper.

Tips

•Fresh, frozen, or canned corn can all be used for this recipe. If using frozen corn, cook and cool it completely before preparing the salad. If using canned corn, drain it thoroughly to prevent excess liquid from thinning the dressing.

•For deeper flavor, lightly char the corn in a hot skillet before allowing it to cool. The slightly smoky, caramelized corn pairs especially well with the creamy avocado and lime dressing.

•Choose ripe but firm avocados. Very soft avocados can become mashed while the salad is being mixed.

•For the freshest appearance, add the avocado shortly before serving. A little additional lime juice can also help slow browning.

•Serve Creamy Avocado Corn Salad chilled as a refreshing side dish alongside grilled chicken, steak, burgers, barbecue meats, tacos, or sandwiches.

Storage 

•Transfer leftovers to an airtight container and refrigerate for up to 1–2 days.

•Because fresh avocado naturally begins to soften and darken after it is cut, this salad tastes and looks best when enjoyed on the day it is prepared.

•For make-ahead preparation, combine the corn, bell pepper, onion, and dressing first and refrigerate them separately from the avocado. Fold in freshly diced avocado shortly before serving.
