Cranberry Pistachio Shortbread Cookies
These buttery Cranberry Pistachio Shortbread Cookies are tender, lightly crisp, and filled with tart dried cranberries and crunchy pistachios. The slice-and-bake method makes them easy to prepare, while the colorful fruit and nuts make them perfect for Christmas, afternoon tea, cookie exchanges, or homemade gifts.
Prep Time: 20 minutes
Chilling Time: 2 hours
Cook Time: 12–15 minutes
Total Time: Approximately 2 hours 35 minutes
Servings: 30–36 cookies
Ingredients
1 cup unsalted butter, softened
â…” cup powdered sugar
1 teaspoon vanilla extract
½ teaspoon almond extract, optional
2 cups all-purpose flour
¼ cup cornstarch
½ teaspoon salt
¾ cup dried cranberries, roughly chopped
¾ cup shelled pistachios, roughly chopped
1 teaspoon finely grated orange zest, optional
Instructions
Place the softened butter and powdered sugar in a large mixing bowl. Beat with an electric mixer for 2–3 minutes, until smooth, pale, and creamy.
Add the vanilla extract, optional almond extract, and orange zest. Beat briefly until everything is combined.
In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. The cornstarch helps create a delicate, melt-in-your-mouth texture.
Gradually add the dry mixture to the creamed butter. Mix on low speed just until a soft, slightly crumbly dough forms. Avoid overmixing.
Add the chopped dried cranberries and pistachios. Fold them into the dough with a spatula until evenly distributed.
Divide the dough into two equal portions. Place each portion on a separate sheet of plastic wrap or parchment paper.
Shape each portion into a firm log approximately 2 inches thick and 7–8 inches long. Press and roll the logs gently to make them even.
Wrap the dough logs tightly and refrigerate them for at least 2 hours. For convenience, they can be refrigerated overnight.
When ready to bake, preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
Unwrap one chilled dough log and place it on a cutting board. Using a sharp knife, cut it into rounds approximately ¼–⅓ inch thick.
If a cookie cracks while slicing, gently press it back together with your fingers. Rotate the log occasionally as you cut to help the cookies maintain a round shape.
Arrange the cookie rounds on the prepared baking sheets, leaving approximately 1 inch between them. Shortbread does not spread very much during baking.
Bake for 12–15 minutes, or until the edges are just beginning to turn light golden. The centers should still look pale and set.
Leave the cookies on the baking sheet for 5 minutes before carefully transferring them to a wire rack.
Allow the cookies to cool completely before serving or storing. They will become firmer and crispier as they cool.
Tips
Use properly softened butter, but do not melt it. Melted butter will make the dough greasy and cause spreading.
Measure the flour accurately. Adding too much can make shortbread dry and crumbly.
Chop large cranberries so the dough logs are easier to slice.
Use unsalted roasted pistachios or raw pistachios. If using salted nuts, reduce the added salt.
Chill the dough thoroughly to help the cookies maintain their shape.
Use a sharp, thin knife and a gentle sawing motion when slicing.
Do not overbake. Traditional shortbread should remain pale with lightly golden edges.
If the dough becomes too soft while slicing, refrigerate it for another 15–20 minutes.
Orange zest adds brightness and pairs beautifully with cranberries and pistachios.
Optional White-Chocolate Decoration
For a more decorative finish, melt ½ cup white chocolate and dip one side of each cooled cookie into it. Place the cookies on parchment paper and sprinkle with finely chopped pistachios. Allow the chocolate to set completely before storing.
Storage
Keep the completely cooled cookies in an airtight container at room temperature for up to 7 days. Place parchment paper between the layers to prevent sticking.
The unbaked dough logs can be refrigerated for up to 3 days.
To freeze the dough, wrap each log tightly in plastic wrap and place it in a freezer-safe bag. Freeze for up to 3 months. Let the dough soften in the refrigerator just enough to slice, then bake as directed.
Baked cookies can also be frozen in an airtight container for up to 2 months. Thaw them at room temperature before serving.

Frequently Asked Questions
Why is my shortbread dough crumbly?
Shortbread dough is naturally more crumbly than regular cookie dough. Continue mixing gently until it holds together when pressed. If it remains extremely dry, mix in one teaspoon of milk.
Can I use fresh cranberries?
Dried cranberries are recommended. Fresh cranberries contain too much moisture and may change the texture of the cookies.
Can I replace the pistachios?
Yes. Pecans, almonds, or walnuts can be used instead.
Can I make the cookies without cornstarch?
Yes. Replace it with an equal amount of all-purpose flour. The cookies will still taste delicious but may have a slightly firmer texture.
How do I keep the cookie logs round?
Rotate the logs several times during chilling, or place them inside an empty cardboard paper-towel tube that has been sliced lengthwise.
