Bacon Wrapped Garlic Chicken bites

- 2 lb boneless, skinless chicken breasts or thighs
- 10–12 slices bacon
- 2 tbsp olive oil
- 1 tbsp brown sugar
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried thyme
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp honey or maple syrup
- 1 tbsp Dijon mustard
- 1 tbsp fresh parsley, finely chopped
InstructionsÂ
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
- Cut the chicken into evenly sized, bite-sized chunks so they cook at the same rate.
- In a large bowl, mix the olive oil, brown sugar, smoked paprika, garlic powder, onion powder, thyme, salt, and black pepper.
- Add the chicken pieces and toss thoroughly until each piece is well coated with the seasoning mixture.
- Cut each bacon slice in half. Wrap a half-slice of bacon securely around each chicken piece.
- Arrange the wrapped chicken bites seam-side down on the prepared baking sheet, leaving a little space between each piece.
- In a small bowl, stir together the honey and Dijon mustard. Brush a thin layer over the top of each bacon-wrapped chicken bite.
- Bake for 22–28 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
- For crispier bacon, switch the oven to broil and cook for another 2–3 minutes, watching closely to prevent burning.
- Remove from the oven and allow the chicken bites to rest for about 5 minutes.
- Sprinkle with chopped fresh parsley and serve warm.
Tips
Use regular-cut bacon instead of thick-cut bacon because it crisps more easily during the short cooking time. Cut the chicken into similar-sized pieces to ensure even cooking.
For a sweeter, stickier finish, brush the bites with a little extra honey glaze or barbecue sauce during the final 5 minutes of baking.
If using chicken thighs, they will usually stay especially juicy and tender.

For the best texture, reheat them in an oven or air fryer at 350°F (175°C) until heated through and the bacon becomes crisp again.
