Bacon-Wrapped Garlic Chicken Bites

Bacon Wrapped Garlic Chicken bites

Ingredients 

  • 2 lb boneless, skinless chicken breasts or thighs
  • 10–12 slices bacon
  • 2 tbsp olive oil
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried thyme
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp honey or maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh parsley, finely chopped

Instructions 

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Cut the chicken into evenly sized, bite-sized chunks so they cook at the same rate.
  3. In a large bowl, mix the olive oil, brown sugar, smoked paprika, garlic powder, onion powder, thyme, salt, and black pepper.
  4. Add the chicken pieces and toss thoroughly until each piece is well coated with the seasoning mixture.
  5. Cut each bacon slice in half. Wrap a half-slice of bacon securely around each chicken piece.
  6. Arrange the wrapped chicken bites seam-side down on the prepared baking sheet, leaving a little space between each piece.
  7. In a small bowl, stir together the honey and Dijon mustard. Brush a thin layer over the top of each bacon-wrapped chicken bite.
  8. Bake for 22–28 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
  9. For crispier bacon, switch the oven to broil and cook for another 2–3 minutes, watching closely to prevent burning.
  10. Remove from the oven and allow the chicken bites to rest for about 5 minutes.
  11. Sprinkle with chopped fresh parsley and serve warm.

Tips

Use regular-cut bacon instead of thick-cut bacon because it crisps more easily during the short cooking time. Cut the chicken into similar-sized pieces to ensure even cooking.

For a sweeter, stickier finish, brush the bites with a little extra honey glaze or barbecue sauce during the final 5 minutes of baking.

If using chicken thighs, they will usually stay especially juicy and tender.

Storage 

Store leftover Bacon-Wrapped Garlic Chicken Bites in an airtight container in the refrigerator for up to 3 days.

For the best texture, reheat them in an oven or air fryer at 350°F (175°C) until heated through and the bacon becomes crisp again.
