2 cans (15 oz each) chickpeas, drained and rinsed
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp garlic powder
1/4 tsp chili flakes, optional
1/2 tsp salt
1/4 tsp black pepper
For the Bowl
2 cups cooked quinoa, couscous, or brown rice
1 cucumber, diced
1 cup cherry tomatoes, halved
1/2 small red onion, thinly sliced
1/2 cup Kalamata olives
1/4 cup fresh parsley, chopped
2 tbsp fresh mint, chopped

Simple Lemon Dressing
3 tbsp extra-virgin olive oil
2 tbsp fresh lemon juice
1 tsp Dijon mustard
1 tsp honey or maple syrup
1 small garlic clove, finely grated

Instructions
1. Make the Crispy Chickpeas
Preheat your oven to 425°F (220°C).
Drain and rinse the chickpeas, then spread them on a clean kitchen towel or paper towels. Pat them thoroughly dry.
Transfer to a baking sheet and toss with olive oil, smoked paprika, cumin, garlic powder, chili flakes, salt, and pepper.
Spread them out into a single layer.
Roast for 25–30 minutes, shaking the pan halfway through, until golden brown and crispy.

2. Whip the Feta
Add feta, Greek yogurt, olive oil, lemon juice, garlic, and black pepper to a food processor.
