3 cups chicken broth or water
1 tbsp olive oil
½ tsp salt
For the Fresh Toppings
1½ cups cucumber, diced
1 cup cherry tomatoes, halved
½ small red onion, thinly sliced
½ cup Kalamata olives
½ cup crumbled feta cheese
¼ cup fresh parsley, chopped
2 tbsp fresh dill, chopped
Lemon wedges, for serving
For the Quick Tzatziki
¾ cup plain Greek yogurt
½ cucumber, finely grated
1 tbsp fresh lemon juice
1 small garlic clove, grated or minced
1 tbsp fresh dill, chopped
1 tbsp olive oil
Salt and black pepper, to taste
Instructions
1. Marinate the Chicken
Add chicken to a bowl along with olive oil, lemon juice, lemon zest, garlic, oregano, paprika, cumin, salt, and pepper.
Toss until thoroughly coated.
If you have time, let it marinate for 20–30 minutes. Even a short marinade adds plenty of flavor.
2. Make the Tzatziki
Place the grated cucumber in a clean towel and gently squeeze out as much liquid as possible.
Mix it with Greek yogurt, lemon juice, garlic, dill, olive oil, salt, and pepper.
Taste and add a little extra lemon juice or salt if needed.
Refrigerate while preparing the rest of the bowl.
3. Cook the Orzo
Bring the chicken broth or water to a boil.
Add the orzo, olive oil, and salt.
Cook according to the package directions, usually around 8–10 minutes, stirring occasionally.
Drain if necessary and fluff with a fork.
For extra Mediterranean flavor, stir in a little lemon zest and chopped parsley.
4. Cook the Chicken
Heat a large skillet or grill pan over medium-high heat.
Add the chicken and cook for approximately 5–7 minutes per side, depending on thickness, until golden brown and cooked through.
The chicken should reach 165°F (74°C) internally.
Allow it to rest for about 5 minutes, then slice into bite-sized pieces.
5. Prepare the Vegetables
While the chicken cooks, chop the cucumber, tomatoes, red onion, parsley, and dill.
Keep the vegetables fresh and crisp rather than cooking them.
6. Assemble the Bowls
Divide the warm orzo among four bowls.
Arrange the sliced chicken, cucumber, tomatoes, red onion, olives, and feta over the top.
Add a generous spoonful of tzatziki.
Finish with fresh parsley, dill, and a squeeze of lemon.
Serve immediately.
Notes
Don’t skip resting the chicken after cooking—it helps keep the meat juicy.
If your feta is packed in brine, drain it well before crumbling.
For the freshest texture, add tzatziki just before serving.
You can serve the orzo warm, at room temperature, or chilled.
Tips for the Best Greek Chicken Orzo Bowl
Get golden chicken
Pat the chicken dry before seasoning and don’t overcrowd the skillet. This helps it brown instead of steam.
Don’t overcook the orzo
Orzo can become soft quickly. Cook just until tender and drain immediately if necessary.
Make the tzatziki thicker
Squeezing excess liquid from the grated cucumber keeps the sauce creamy rather than watery.
Brighten everything at the end
A final squeeze of fresh lemon over the assembled bowl makes all the flavors pop.
Add texture
Toasted pita chips, roasted chickpeas, or toasted pine nuts make excellent crunchy toppings.
Frequently Asked Questions
Can I make this ahead of time?
