Total Time: 45–50 minutes

Ingredients

For the Roasted Sweet Potatoes

  • 3 medium sweet potatoes
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 teaspoon dried oregano

For the Feta Topping

  • ¾ cup crumbled feta cheese
  • ½ cup sun-dried tomatoes, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice

For Finishing

  • 2 tablespoons honey
  • Extra fresh parsley for garnish
  • Freshly ground black pepper, to taste

Instructions

1. Preheat the Oven

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier. Position the oven rack in the center for even roasting.

2. Prepare the Sweet Potatoes

Wash the sweet potatoes thoroughly under running water and scrub away any dirt. Pat them dry with a clean kitchen towel. Leave the skins on for extra texture, or peel them if preferred. Cut each sweet potato into thick, even rounds, approximately ¾ to 1 inch thick.

3. Season the Sweet Potato Rounds

Place the sliced sweet potatoes in a large mixing bowl. Drizzle with olive oil and sprinkle with salt, black pepper, garlic powder, smoked paprika, and dried oregano. Toss gently until every round is evenly coated with the oil and seasonings.

4. Arrange on the Baking Sheet

Spread the seasoned sweet potato rounds in a single layer on the prepared baking sheet. Leave a little space between each slice so the hot air can circulate properly. Avoid overcrowding, as this can cause the potatoes to steam instead of roast.

5. Roast Until Golden and Tender

Place the baking sheet in the preheated oven and roast for 25–35 minutes. Flip the sweet potato rounds halfway through cooking to ensure both sides develop beautiful golden-brown edges. The potatoes are ready when they are tender in the center and lightly caramelized around the edges.

6. Prepare the Creamy Feta Topping

While the sweet potatoes are roasting, place the crumbled feta cheese in a medium mixing bowl. Add the finely chopped sun-dried tomatoes, fresh parsley, and lemon juice. Gently mix everything together until combined, keeping some larger feta crumbles for a creamy, slightly chunky texture.

7. Check the Roasted Sweet Potatoes

Remove the sweet potatoes from the oven once they are golden and fork-tender. Allow them to cool for 2–3 minutes so they remain warm but are easier to handle. Transfer them carefully to a wooden serving board or large serving platter.

8. Add the Feta and Sun-Dried Tomato Topping

Spoon a generous amount of the prepared feta mixture onto each roasted sweet potato round. Spread the topping gently over the center, allowing the creamy feta and tangy sun-dried tomatoes to sit beautifully on top without covering all the golden edges.

9. Drizzle with Honey

Warm the honey slightly if it is too thick to drizzle. Using a small spoon, drizzle honey evenly over each topped sweet potato round. The honey adds a delicate sweetness that perfectly complements the salty feta, savory seasonings, and tangy tomatoes.

10. Garnish and Serve

Sprinkle additional freshly chopped parsley and a little freshly ground black pepper over the finished sweet potato rounds. Arrange them neatly on a serving platter and serve while still warm. Enjoy as a flavorful appetizer, holiday side dish, or delicious vegetarian snack.

Tips for the Best Results

  • Choose evenly sized sweet potatoes: This helps ensure all the rounds roast at the same rate.
  • Cut thick slices: Slices approximately ¾ to 1 inch thick hold their shape better and develop soft, creamy centers.
  • Avoid overcrowding: Leave space between the rounds for better browning and caramelization.
  • Use good-quality feta: Creamy, tangy feta gives the topping a richer flavor.
  • Drain sun-dried tomatoes: If using oil-packed tomatoes, drain excess oil before chopping.
  • Add honey just before serving: This keeps the topping fresh and prevents the finished rounds from becoming overly sticky.
  • Serve warm: The contrast between warm, caramelized sweet potatoes and creamy feta makes this dish especially delicious.
