Mediterranean Marinated Cucumber Salad
Prep Time: 15 mins | Chill Time: 1 hour | Servings: 4–6
Ingredients
- Vegetables:
- 3 English cucumbers (or 5 Persian cucumbers), sliced into 0.5 cm rounds
- 1 small red onion, thinly sliced into half-moons
- 1 medium carrot, finely diced
- 3 tbsp fresh dill, finely chopped
- 2 tbsp fresh flat-leaf parsley, finely chopped
- 2 cloves garlic, finely minced
- Marinade / Dressing:
- 1/3 cup extra virgin olive oil
- 1/4 cup apple cider vinegar (or white wine vinegar)
- 2 tbsp fresh lemon juice
- 1 tsp honey or maple syrup
- 1/2 tsp crushed red pepper flakes
- 1 tsp dried oregano
- 1 tsp sea salt (adjust to taste)
- 1/2 tsp freshly cracked black pepper
Instructions
- Prep the vegetables: Slice the cucumbers, thinly shave the red onion, and finely dice the carrot. Chop the fresh dill and parsley.
- Make the dressing: In a medium bowl or measuring cup, whisk together the olive oil, vinegar, lemon juice, minced garlic, honey, oregano, red pepper flakes, salt, and black pepper until well emulsified.
- Assemble in a jar: In a large wide-mouth glass mason jar (or a sealable glass container), layer or toss together the cucumber slices, diced carrots, sliced red onion, dill, and parsley.
- Pour & coat: Pour the prepared marinade over the vegetables. Seal the lid tightly and gently invert or shake the jar until all vegetables are thoroughly coated in the herb-infused liquid.
- Marinate: Place the jar in the refrigerator for at least 1 hour (best after 3–4 hours) to allow flavors to absorb while keeping the cucumbers crisp.
- Serve: Serve chilled straight from the jar using tongs or a slotted spoon as a side salad, sandwich topping, or barbecue accompaniment.
