Slow Cooker French Onion Pot Roast with Egg Noodles

Tender chuck roast cooks with onions, garlic, and savory broth until it can be pulled apart with a fork. Serve it over wide egg noodles with plenty of the rich onion gravy, as shown in the photo.

Prep Time: 25 minutes
Cook Time: 8–9 hours on LOW or 4–5 hours on HIGH
Servings: 6–8

Ingredients

  • 3–4 lb boneless beef chuck roast
  • 2 tablespoons olive oil
  • 3 large yellow onions, thinly sliced
  • 3 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 1 packet French onion soup mix
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • 12 oz wide egg noodles
  • 2 tablespoons butter, for the noodles

Optional, for thicker gravy:

  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Instructions

Step 1: Pat the chuck roast dry. Heat the olive oil in a large skillet over medium-high heat and sear the roast for 3–4 minutes per side, until well browned. Transfer it to the slow cooker.

Step 2: Add the sliced onions to the same skillet. Cook over medium heat for 10–15 minutes, stirring occasionally, until softened and golden. Add the garlic and cook for 1 more minute.

Step 3: Spoon the onions and garlic around the roast. Whisk together the beef broth, French onion soup mix, Worcestershire sauce, thyme, and black pepper. Pour the mixture into the slow cooker.

Step 4: Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the roast is fork-tender. Cooking time may vary with the size of the roast.

Step 5: Transfer the roast to a board and let it rest for 10 minutes. Slice or pull it into large pieces.

Step 6: For a thicker gravy, whisk the cornstarch with the cold water. Stir it into the hot liquid in the slow cooker, cover, and cook on HIGH for 15–20 minutes, until thickened. Return the beef to the gravy.

Step 7: Cook the egg noodles separately according to the package directions. Drain and toss with the butter. Serve the beef and onions over the noodles, spooning gravy over each portion.

Tips

  • Chuck roast is ideal because it becomes tender during long, slow cooking.
  • Searing the beef and browning the onions give the gravy a deeper flavor.
  • Taste the gravy before adding salt; French onion soup mix can be salty.
  • Cook the noodles just before serving so they stay firm rather than soaking up all the gravy.

Storage

Refrigerate the beef and gravy in an airtight container for up to 3–4 days. Store leftover noodles separately when possible. Freeze the beef and gravy for up to 3 months, then thaw in the refrigerator and reheat until hot throughout.

Serving Ideas

Serve with buttered egg noodles, mashed potatoes, or crusty bread. Green beans or a simple salad make good sides.

Nutrition Benefits

Beef provides protein, iron, and vitamin B12. The onions add flavor without needing a cream-based sauce. Nutrition varies with the roast, soup mix, and serving size.

Recipe Q&A

Can I skip searing the roast?
Yes. The roast will still cook, though searing adds a richer browned flavor.

Can I put the dry noodles in the slow cooker?
It is better to cook them separately. They can become overly soft during the long cooking time.

Can I make this without a soup mix packet?
Yes. Use extra sautéed onion, 1 teaspoon onion powder, and a little additional salt to taste in its place.
