Ingredients 

  • 6–8 bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 6 garlic cloves, minced
  • ½ cup low-sodium soy sauce
  • ⅓ cup honey
  • ¼ cup brown sugar
  • 3 tablespoons ketchup
  • 2 tablespoons rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 1 whole star anise, optional
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions 

  1. Pat the chicken thighs dry. Season both sides with salt, black pepper, and garlic powder.
  2. Heat olive oil in a skillet over medium-high heat. Place the thighs skin-side down and sear for 3–4 minutes until deeply golden. Flip and cook for another 1–2 minutes.
  3. Whisk together soy sauce, honey, brown sugar, ketchup, rice vinegar, hoisin sauce, grated ginger, sesame oil, and minced garlic.
  4. Arrange the chicken thighs in the slow cooker. Add the star anise, if using, and pour the honey-garlic sauce evenly over the chicken.
  5. Cover and cook on LOW for 4–5 hours or HIGH for 2½–3 hours, until tender and the chicken reaches at least 165°F (74°C) internally.
  6. Carefully transfer the cooked chicken to a plate. Pour the cooking sauce into a saucepan.
  7. Mix the cornstarch and cold water until smooth. Whisk it into the sauce and simmer for 3–5 minutes, until thick, glossy, and sticky.
  8. Brush the thickened honey-garlic glaze generously over the chicken. For extra caramelization, broil the glazed thighs for 2–4 minutes, watching carefully to prevent burning.
  9. Spoon over additional sauce and finish with sliced green onions and sesame seeds.

Bone-in chicken thighs stay especially juicy during slow cooking. Searing them first gives the skin better color and adds deeper flavor. For a sweeter glaze, add an extra tablespoon of honey.
