Creamy Garlic Mushroom and spinach Stuffed Sweet PotatoesÂ

For the Sweet Potatoes
- 2 medium-to-large sweet potatoes, scrubbed and dried
- 1 tablespoon olive oil
- Salt, to taste
- Freshly ground black pepper, to taste
For the Creamy Mushroom & Spinach Filling
- 8 oz (225 g) cremini or button mushrooms, sliced
- 4 cups fresh baby spinach, roughly chopped
- 2 tablespoons butter or olive oil
- 3 garlic cloves, finely minced

- 2 tablespoons grated Parmesan cheese, optional
- 1 teaspoon fresh thyme leaves, finely chopped
- Salt, to taste
- Freshly cracked black pepper, to taste
- Fresh parsley, finely chopped, for garnish
InstructionsÂ
- Prepare the Sweet Potatoes: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.
- Pierce each sweet potato several times with a fork. Rub the skins evenly with olive oil and season lightly with salt.
- Arrange the sweet potatoes on the prepared baking sheet and roast for approximately 45–50 minutes, or until completely tender when pierced with a fork. Larger potatoes may require a few additional minutes.
- Cook the Mushrooms: While the sweet potatoes are roasting, melt the butter in a large skillet over medium-high heat.
- Add the sliced mushrooms and spread them into an even layer. Allow them to cook without stirring for about 3–4 minutes so they develop a deep golden-brown color.
- Stir the mushrooms and continue cooking for another 2–3 minutes, until tender and nicely browned around the edges.
- Add the minced garlic and fresh thyme. Stir and cook for about 1 minute, just until the garlic becomes fragrant.
- Add the Spinach: Reduce the heat to medium. Add the baby spinach in batches, gently stirring after each addition until the leaves wilt and reduce in volume.
- Pour in the heavy cream and stir everything together. Add the grated Parmesan, if using, and continue stirring until it melts into the sauce.
- Allow the mixture to gently simmer for 2–3 minutes, or until the cream has slightly reduced and forms a rich sauce around the mushrooms and spinach.
- Season the filling with salt and freshly cracked black pepper according to taste. Remove the skillet from the heat.
- Stuff the Sweet Potatoes: Once the roasted sweet potatoes are tender, carefully slice each one lengthwise through the center without cutting completely through the bottom.
- Gently press the ends toward the center to open each potato. Use a fork to lightly fluff the soft sweet potato flesh.
- Spoon a generous amount of the creamy garlic mushroom and spinach filling into the center of each roasted sweet potato.
- Finish with freshly chopped parsley and a little extra black pepper. Serve immediately while warm and creamy.
Tips
For the best mushroom flavor, avoid overcrowding the skillet. Giving the mushrooms enough space allows them to brown instead of steaming.
Make sure the skillet is hot before adding the mushrooms, and resist stirring them immediately. A few minutes of uninterrupted cooking helps create beautifully caramelized edges.
For a dairy-free version, use olive oil instead of butter, full-fat coconut milk instead of heavy cream, and leave out the Parmesan or use a suitable dairy-free alternative.
If you prefer a thicker filling, let the cream simmer for an additional minute or two before stuffing the potatoes.
You can also add a pinch of red pepper flakes for gentle heat or a squeeze of fresh lemon juice for a brighter finish.
