CHEESY CAPRESE BAKED ZUCCHINI
Cheesy Caprese Baked Zucchini is an easy Mediterranean-inspired side dish made with fresh zucchini, juicy tomatoes, creamy melted mozzarella, fragrant basil, and Italian herbs. The zucchini becomes tender in the oven while the tomatoes soften and caramelize and the mozzarella melts into a delicious golden topping.
This simple baked zucchini recipe is perfect when you want something flavorful without a complicated ingredient list. It works beautifully as a light vegetarian dinner, a colorful side dish for grilled chicken or fish, or an easy addition to a summer meal.
INGREDIENTS
4 medium zucchini
2–3 medium Roma or vine-ripened tomatoes
8 oz (225 g) fresh mozzarella, sliced
2 tbsp olive oil
1 tsp Italian seasoning
1/2 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp red pepper flakes, optional
1/2 tsp salt, or to taste
1/4 tsp freshly ground black pepper
1/4 cup fresh basil leaves
2 tbsp grated Parmesan cheese, optional
1–2 tbsp balsamic glaze, optional
INSTRUCTIONS
1. PREPARE THE ZUCCHINI
Preheat your oven to 400°F (200°C).
Wash and dry the zucchini thoroughly. Cut each zucchini in half lengthwise. You can leave the zucchini whole as boats, or lightly scoop out a small amount from the center if you prefer more room for the toppings.
Place the zucchini halves cut-side up on a large baking sheet or baking dish.
2. SEASON THE ZUCCHINI
Drizzle the zucchini evenly with olive oil.
In a small bowl, combine Italian seasoning, dried oregano, garlic powder, salt, black pepper, and red pepper flakes if using.
Sprinkle the seasoning mixture over the zucchini, making sure each piece is lightly coated.
3. ADD THE TOMATOES AND CHEESE
Slice the tomatoes into medium-thick rounds. Avoid slicing them too thin because they can become overly soft during baking.
Slice the fresh mozzarella into rounds.
Arrange alternating slices of mozzarella and tomato over each zucchini half. Slightly overlap the slices so every bite contains zucchini, tomato, and melted cheese.
Sprinkle Parmesan over the top if desired.
4. BAKE
Place the baking sheet in the preheated oven.
Bake for approximately 20–25 minutes, or until the zucchini is tender and the mozzarella has melted.
For a more golden, bubbly cheese topping, switch the oven to broil for the final 1–2 minutes. Watch carefully because the cheese can brown quickly.
The exact baking time will depend on the size and thickness of your zucchini. Larger zucchini may need a few extra minutes.
5. GARNISH
Remove the baked zucchini from the oven and allow it to rest for about 3–5 minutes.
Scatter fresh basil leaves over the top.
For a classic Caprese-style finish, drizzle a small amount of balsamic glaze over the zucchini just before serving.
Serve warm.
WHY YOU’LL LOVE THIS RECIPE
This recipe combines some of the best flavors of a classic Caprese salad with warm, roasted zucchini and gooey melted cheese.
The zucchini provides a tender, mild base, while fresh tomatoes add juicy sweetness. Mozzarella brings creamy richness, and basil adds a fresh herbal flavor. Italian seasoning and garlic make the dish even more savory without requiring a long list of ingredients.
It is also flexible. You can prepare it as a side dish for a family dinner or serve two zucchini halves per person as a light vegetarian meal.
TIPS FOR PERFECT BAKED ZUCCHINI
Choose medium-sized zucchini. Very large zucchini can contain more seeds and water and may become soft when baked.
Use firm tomatoes. Roma tomatoes are particularly useful because they hold their shape well during baking.
Do not overload the zucchini with cheese. A moderate layer melts beautifully without completely covering the vegetables.
If your zucchini releases a lot of moisture, gently pat it dry before adding the toppings.
For extra browning, use the broiler briefly at the end. Stay close to the oven during broiling.
Fresh basil is best added after baking. This keeps its color, aroma, and fresh flavor.
If using balsamic glaze, add it after baking rather than before. This gives you better control over the flavor and presentation.
RECIPE VARIATIONS
Chicken Caprese Zucchini:
Add small pieces of cooked chicken breast between the tomato and mozzarella layers for a more filling meal.
Pesto Caprese Zucchini:
Spread a very thin layer of basil pesto over the zucchini before adding the tomato and mozzarella.
Spicy Caprese Zucchini:
Increase the red pepper flakes or add a pinch of crushed chili flakes.
Parmesan Crusted:
Add extra Parmesan during the final few minutes of baking for a more golden, savory topping.
Low-Carb Version:
The recipe is naturally low in carbohydrates compared with many traditional baked side dishes. Skip the balsamic glaze if you want to keep the added sugars lower.
STORAGE
Allow leftovers to cool before placing them in an airtight container.
Refrigerate for up to 3 days.
To reheat, place the zucchini in a 375°F (190°C) oven for approximately 8–12 minutes, or until heated through. You can also reheat it in an air fryer for a few minutes.
Microwaving works for convenience, but the zucchini may become softer and the cheese will not be as nicely browned.
Freezing is not recommended because zucchini and fresh tomatoes contain a lot of water, which can affect the texture after thawing.
SERVING SUGGESTIONS
Cheesy Caprese Baked Zucchini pairs well with grilled chicken, roasted chicken, baked salmon, grilled shrimp, steak, or other Mediterranean-inspired dishes.
For a simple vegetarian meal, serve it with a fresh green salad and crusty whole-grain bread.
You can also serve the zucchini alongside pasta, rice, quinoa, roasted potatoes, or a Mediterranean grain bowl.
For a summer dinner, pair it with grilled meat and a refreshing cucumber salad.
