This crisp cucumber and carrot salad is fresh, tangy, slightly sweet, and packed with sesame-soy flavor. It makes a light side dish for dinner and is especially good served chilled.

One important note: this salad can be part of a lower-calorie meal, but no specific food can “burn fat while you sleep.” Weight loss depends on your overall eating pattern, activity, sleep, and calorie balance.

Ingredients

  • 3 medium cucumbers, thinly sliced
  • 1 tablespoon salt
  • 1 medium carrot, julienned or grated
  • 3 green onions, thinly sliced
  • 2 tablespoons sesame seeds
  • 40 ml olive oil, about 2 tablespoons + 2 teaspoons
  • 20 ml soy sauce, about 1 tablespoon + 1 teaspoon
  • 20 g sugar, about 1½ tablespoons
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon paprika
  • ½ teaspoon red pepper flakes, optional
  • 1 small garlic clove, minced
  • 1 teaspoon sesame oil, optional

Instructions

  1. Place the sliced cucumbers in a large bowl and sprinkle them with 1 tablespoon salt. Toss well and let them sit for about 15–20 minutes. This pulls out excess moisture and helps the cucumbers stay crisp.
  2. Drain the liquid from the cucumbers. Rinse them briefly under cold water to remove excess salt, then pat them dry with paper towels.
  3. Add the cucumbers to a clean mixing bowl with the shredded carrot and sliced green onions.
  4. In a small skillet, lightly toast the sesame seeds over medium-low heat for about 1–2 minutes, stirring constantly. Remove from the heat once fragrant.
  5. In a small bowl, whisk together the olive oil, soy sauce, sugar, vinegar, paprika, garlic, red pepper flakes, and sesame oil if using.
  6. Stir until the sugar is mostly dissolved and the dressing looks well combined.
  7. Pour the dressing over the cucumber, carrot, and green onion mixture.
  8. Add the toasted sesame seeds.
  9. Toss everything thoroughly until the vegetables are evenly coated in the dressing.
  10. Let the salad rest for 10–15 minutes before serving so the flavors have time to blend.
  11. Serve chilled or at room temperature.

Tips

For extra crunch, use English or Persian cucumbers because they contain fewer seeds and tend to stay firmer.

If you prefer a less sweet salad, reduce the sugar to 1–2 teaspoons. For more heat, add extra red pepper flakes or a little chili oil.

You can also add chopped cilantro, fresh dill, shredded cabbage, or thinly sliced red bell pepper.

Storage

Store the salad in an airtight container in the refrigerator for up to 2 days.

The cucumbers will gradually release more water, so give the salad a quick toss before serving again.
