Avocado, Tomato & Egg Salad
Prep Time: 15 minutes
Cook Time: 10 minutes
Servings: 3–4
Ingredients
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 3 large eggs
- ¼ small red onion, thinly sliced
- 2 tablespoons fresh parsley or cilantro, chopped
- 1½ tablespoons fresh lemon juice
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- Pinch of red pepper flakes
Instructions
- Place the eggs in a saucepan and cover them with water. Bring to a boil and cook for about 9–10 minutes.
- Transfer the cooked eggs to a bowl of cold water. Let them cool completely, then peel and cut them in half.
- Dice the avocados into bite-sized pieces, halve the cherry tomatoes, thinly slice the red onion, and finely chop the parsley or cilantro.
- In a small bowl, whisk together the lemon juice and olive oil. Season with salt, black pepper, and red pepper flakes.
- Add the avocado, cherry tomatoes, red onion, and fresh herbs to a large salad bowl.
- Pour the lemon-olive oil dressing over the vegetables and gently toss until everything is lightly coated. Avoid overmixing so the avocado pieces stay intact.
- Arrange the boiled egg halves over the top of the salad.
- Garnish with extra fresh herbs, black pepper, or a pinch of red pepper flakes.
- Serve immediately with an extra squeeze of fresh lemon juice if desired.
Tips
Use ripe but firm avocados so they hold their shape while tossing.
For a creamier salad, gently mash a few avocado pieces into the dressing.
You can also add cucumber, feta cheese, spinach, or lettuce for extra freshness.
For additional protein, add grilled chicken, tuna, chickpeas, or shrimp.
Storage
This salad is best enjoyed immediately because avocado naturally begins to brown after cutting.
If storing leftovers, place them in an airtight container in the refrigerator for up to 1 day. Adding extra lemon juice can help slow down browning.
Quick Q&A
Can I make this salad ahead of time?
Yes. Prepare the eggs, tomatoes, onion, herbs, and dressing ahead of time, but cut and add the avocado shortly before serving.
How can I keep the avocado from turning brown?
Coat the avocado pieces with fresh lemon juice immediately after cutting them.
Can I use regular tomatoes instead of cherry tomatoes?
Yes. Dice regular tomatoes into bite-sized pieces and remove excess seeds or liquid if necessary.
Can I use lime juice instead of lemon juice?
Yes. Fresh lime juice gives the salad a slightly different but equally refreshing flavor.
Can I make it spicy?
Yes. Add extra red pepper flakes, chopped jalapeño, or a pinch of cayenne pepper.
