Cook Time: 25–30 minutes
Total Time: 45–50 minutes
Servings: 4
Ingredients
- 4 large boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 4 oz cream cheese, softened
- 1 cup fresh spinach, chopped
- 3 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp dried Italian seasoning
- 1/2 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/4 tsp red pepper flakes, optional
- 2 tbsp olive oil
- 1 tbsp butter
- 1/4 cup chicken broth
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the chicken breasts dry with paper towels.
- Using a sharp knife, carefully cut a deep pocket into the side of each chicken breast. Do not cut all the way through.
- In a medium bowl, combine the softened cream cheese, mozzarella, chopped spinach, half of the minced garlic, parsley, Italian seasoning, oregano, and red pepper flakes.
- Mix until the filling is evenly combined.
- Divide the cheesy spinach filling between the chicken breasts and stuff it gently into each pocket.
- Secure the openings with toothpicks if needed.
- Season the outside of the chicken with salt, black pepper, and paprika.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Add the stuffed chicken breasts and sear for about 3–4 minutes per side, until golden brown.
- Reduce the heat slightly and add the butter and remaining minced garlic to the skillet.
- Cook the garlic for about 30 seconds, then pour in the chicken broth.
- Spoon a little of the buttery garlic mixture over the chicken.
- Transfer the skillet to the preheated oven.
- Bake for 18–22 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
- For a more golden cheese filling, broil for the final 1–2 minutes, watching carefully.
- Remove from the oven and let the chicken rest for about 5 minutes.
- Remove any toothpicks before serving.
- Spoon the garlic-herb pan juices over the chicken and garnish with additional chopped parsley.
Tips
Use large, thick chicken breasts because they are easier to stuff without tearing.
Do not overfill the chicken pockets. Too much filling can spill out during cooking.
Softened cream cheese mixes more easily with the mozzarella and herbs.
If the spinach contains a lot of moisture, sauté it briefly and squeeze out excess liquid before mixing it into the filling.
Searing the chicken before baking helps create the golden exterior shown in the image.
For extra flavor, add grated Parmesan to the cheese filling.

Frequently Asked Questions
Can I use another cheese?
Yes. Provolone, Monterey Jack, cheddar, Parmesan, or a cheese blend can work well.
Can I prepare the chicken ahead of time?
Yes. Stuff and season the chicken, cover it, and refrigerate for up to 24 hours before cooking.
Can I use frozen spinach?
Yes. Thaw it completely and squeeze out all excess moisture first.
Why is the filling leaking out?
The chicken may be overfilled or the pocket may be cut too close to the edge. Secure it with toothpicks if necessary.
Can I make this without cream cheese?

Can I cook it entirely in the oven?
Yes. Place the stuffed chicken in a greased baking dish and bake at 400°F for about 25–30 minutes, depending on thickness.
How do I know when the chicken is done?
The thickest part of the chicken should reach 165°F (74°C).
Can I make it spicy?
Yes. Add extra red pepper flakes, cayenne pepper, or chopped jalapeño to the filling.
