Ingredients
- 2 large eggplants
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup marinara sauce
- 1 cup diced tomatoes
- 1 tsp Italian seasoning
- 1/2 tsp dried oregano
- 1/2 tsp black pepper
- Salt, to taste
- 1 cup shredded mozzarella cheese
- 1/3 cup grated Parmesan cheese
- 1/4 cup fresh basil or parsley, chopped
- 1/2 cup breadcrumbs, optional
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the eggplants in half lengthwise.
- Using a spoon, carefully scoop out most of the flesh from each half, leaving about a 1/2-inch border so the eggplant shells stay sturdy.
- Chop the scooped eggplant flesh into small pieces and set aside.
- Brush the eggplant shells lightly with olive oil and place them cut-side up in a baking dish.
- Bake the empty eggplant shells for about 12–15 minutes to begin softening them.
- Meanwhile, heat the remaining olive oil in a skillet over medium heat.
- Add the chopped onion and cook for 3–4 minutes until softened.
- Add the minced garlic and cook for about 30 seconds.
- Add the chopped eggplant flesh and cook for 5–7 minutes, stirring occasionally, until tender.
- Stir in the marinara sauce, diced tomatoes, Italian seasoning, oregano, black pepper, and salt.
- Simmer the filling for about 5 minutes until slightly thickened.
- Remove the eggplant shells from the oven.
- Spoon the tomato and eggplant mixture generously into each shell.
- Sprinkle mozzarella cheese over the top.
- Add Parmesan cheese and breadcrumbs if using.
- Return the stuffed eggplants to the oven and bake for another 18–22 minutes, until the cheese is melted and golden and the eggplant is fully tender.
- Remove from the oven and let them rest for about 5 minutes.
- Garnish with fresh basil or parsley before serving.

For extra protein, add cooked ground beef, Italian sausage, ground turkey, or lentils to the filling.
Do not scoop the eggplant shells too thin, or they may collapse during baking.
